Cours de chimie industrielle : lecture notes, 1846-1847.

Notes and drawings from the second year of industrial chemistry studies at the Ecole centrale des arts et manufactures, taught by the French chemist Anselme Payen, compiled by a student with the family name Borda. The 32 lessons of the course focus on the properties and processing of foodstuffs such as potatoes, glucose, sugar cane, sugar beets, and grains, and give substantial attention to beer brewing (p. 179-198) and wine making (p. 203-225). The course also addresses the production of paper (p. 225-236).
